Dhokla is a cherished vegetarian delicacy originating from the Indian state of Gujarat. Its history dates back to as early as 1068 AD, where a similar dish called "dukkia" is documented in Jain texts. The term "dhokla" itself appears in the Gujarati work Varanaka Samuchaya around 1520 AD. Traditionally, dhokla holds a significant place in Gujarati culture, often prepared during festivals, special occasions, and as a staple breakfast or snack item. Its steamed preparation and fermented batter not only highlight the ingenuity of Gujarati cuisine but also reflect the region's emphasis on healthful and flavorful vegetarian dishes.
Taste & Quality
Taste & Quality
Dhokla boasts a soft, spongy texture achieved through the steaming of a fermented batter made primarily from rice and split chickpeas (chana dal). Its flavor profile is a harmonious blend of mildly tangy and subtly sweet notes, complemented by a gentle hint of spice. Visually, dhokla presents a warm yellow hue, often cut into square or diamond-shaped pieces. Traditionally, it is garnished with a tempering of mustard seeds, sesame seeds, curry leaves, and green chilies, which not only enhance its appearance but also add layers of flavor. A sprinkle of freshly chopped coriander leaves and grated coconut further elevates its appeal, making it as delightful to the eyes as it is to the palate.
